Biryani Bahraini

● 2 cups rice
● 500g chicken
● 1 onion (sliced)
● 2 tomatoes
● 2 tbsp biryani spice
● 1 tsp garam masala
● ½ tsp turmeric
● ½ tsp chili powder
● ½ cup yogurt
● 1 tbsp ginger-garlic paste
● 1 pinch saffron soaked in 2 tbsp milk
● 3 tbsp oil
● Salt to taste

1. Fry onions crisp and set aside.
2. Sauté chicken with spices, tomatoes, yogurt.
3. Cook until chicken is tender.
4. Parboil rice (70% cooked).
5. Layer rice + chicken + fried onions.
6. Add saffron milk.
7. Cover and steam 20 minutes.
