Machboos
● 2 cups basmati or sella long-grain rice
● 1 kg chicken (cut into pieces)
● 3 tbsp Bahraini machboos spice mix
● 2 dried limes (loomi)
● 1 large onion (finely chopped)
● 4 garlic cloves (minced)
● 2 tomatoes (chopped)
● 1 cinnamon stick
● 4 cardamom pods
● 1 bay leaf
● 1 chicken stock cube (optional)
● 1 tsp turmeric
● 1 tsp black pepper
● 1 tsp paprika
● ¼ cup oil
● Salt to taste
● Water as needed
1. Wash and soak rice for 30 minutes.
2. In a pot, heat oil and sauté onions until golden.
3. Add garlic, spices, cinnamon, cardamom, bay leaf, and loomi.
4. Add chicken, sear until browned.
5. Add tomatoes and cook until soft.
6. Pour water to cover chicken; simmer 30 minutes.
7. Remove chicken from broth and set aside.
8. Add rice to broth, cook on medium until water reduces.
9. Place chicken on top, cover, steam on low for 20 minutes.
10. Serve hot with dakkous (tomato sauce).
