Muhammar
● 2 cups rice
● 4 tbsp ghee
● ½ cup sugar OR ½ cup date molasses
● 1 tsp cardamom
● 1 tsp rosewater
● Pinch saffron
● Salt (1/4 tsp)
1. Rinse rice and parboil until 70% cooked.
2. Melt ghee and mix with sugar/molasses.
3. Add rice, cardamom, saffron, rosewater.
4. Cover tightly and steam for 25 minutes.
5. Serve with fried fish.
